Let's get started!


I'll be honest, I've never written a blog before so this whole process is a little nerve wracking for me.  But I think I'm starting to get the hang of it (or at least I hope so). Over the course of this week, I've been thinking about how my Genius Hour project will unfold by the end. Will I have enough time to bake? Will the recipes even turn out? What happens if I cant find a lot that seem exciting to try? All these questions and I had to keep reminding myself to BREATHE! Life can get so busy at times that you don't know which way to go. As a student working part-time, I often try to come up with the best way to manage my time to include things I want to try, which for me is trying new food.

I am the type of person to always have smaller, more frequent meals throughout the day as oppose to three big ones. To begin, I started looking at some cookbooks and recipes online to give me some inspiration. Thankfully, I follow a few athletes and health influencers on social media that often post what they eat in a day or recipes they have created over the years. I've saved a few over the past months wanting to try them but never got around to them until now.

You can always find the standard chocolate chip cookies, or fruit-filled muffins but many times dessert recipes don't include vegetables. Some may say vegetables do not belong in dessert but the muffins and loaves I enjoy eating call for at least one in the recipe. This prompted me to look up carrot muffins as they've always been my favourite along side blueberry muffins. Many I came across had lots of white sugar, butter and oils to enhance the flavour. After a few hours of searching I came across a carrot cake muffin recipe that included almond flour, a sweetener of your choice in which I chose honey and coconut oil. All three ingredients are known to be cleaner and healthier for you.

Can I just say they didn't turn out how I expected! :( I've baked muffins in the past and this has never been a problem. The bottom of each muffin got burnt and a few got a tad too crispy on the top. I even topped some with crushed walnuts and coconut sugar to add a little pizazz but clearly that didn't do the muffins any good.


I'm hoping the next recipe I try has a better end result. Keep your fingers crossed for me! Until next time....
