Fingers Crossed
Here we go, the last and final recipe of Genius Hour! I sure hope this goes a lot smoother than the past two recipes.
It is crazy how fast the time has flown not only since this project started, but all of September! When I began this project I researched and found a few recipes in advanced to help with time so I didn't have to worry about what I was baking every week. As mentioned in my previous post, I started my student teacher placement last week. Especially working with kids you get tired more easily, and for me I was constantly hungry throughout the day. After finding out some of the students in the class had more allergies than just nuts, I had to go back to the search engine on google as I wanted to enjoy some homemade goods all throughout the week.
Each week my challenge has been to try and find one vegetable in a dessert recipe which I have managed thus far. But on top of that, this week I had to look up dairy-free AND nut-free recipes which I found a tad tricky. I wanted to find an energy bites recipe as they are easy to grab and go just like the muffins I made these past few weeks. But so many of them had called for a type of nut butter in order to hold the ingredients together or a dairy ingredient which I was trying to avoid.
After researching for a few days, I came across a paleo, nut-free apple crisp recipe. Need I say more?! It had FALL written all over it and I was so eager to get into the kitchen to start baking. Every year I try to go apple picking with some friends and we usually get together and bake an apple crumble and top it with vanilla ice cream. Although it may not be the most healthiest, it sure is tasty! But, I stuck to my challenge of creating a healthier version, that I could take on the go with some coconut yogurt or or just to have it on its own. If you would like to try the recipe click HERE!
Most recipes called for almond flour so I substituted for oat flour as I was already using oats for the apple crumble. If you don't have oat flour all you need to do is grind some oats in a blender or food processor....not only simple but saves you money! Also, traditional recipes call for brown sugar which is a little bit better than white sugar but still not that great in large amounts! I couldn't even taste the difference with this recipe it was that good! I'm so happy this one finally turned out, even though it was a lot simpler :)
Since I couldn't take a picture of the final product as my family started taste testing the recipe as soon as it came out of the oven, I included a photo from the baker's website! How good does it look?! Just writing this post I can smell the cinnamon and warm apples!!!!
As this journey is coming to a close, next week will be my final reflection of this baking process and I cannot wait to share with you all that I've learned!
